1 Kg. de tomates<\/p>\n

200 g. de Pan de Telera Cordobesa<\/p>\n

100 g. de Aceite de Oliva virgen extra D.O.<\/p>\n

1 diente de Ajo de Montalb\u00e1n<\/p>\n

10 g. de Sal<\/p>\n

Preparaci\u00f3n:<\/p>\n

Limpiar y triturar los tomates, colar para quitar la piel y las pepitas, volver a triturar a\u00f1adi\u00e9ndole el pan, el Aceite de Oliva Virgen Extra, los ajos y la sal.<\/p>\n

Decorar con huevo duro picado y trocitos de \u00a0jam\u00f3n serrano, unas gotas de aceite de oliva o trozos de pan tostado (picatoste).<\/p>\n

Su Historia<\/h2>\n

El primer apunte escrito que se conoce del Salmorejo, figura en\u00a0el Diccionario de la RAE de 1737. Conocido\u00a0entonces como Diccionario de las Autoridades. Con la salvedad de que no se describe como lo que estamos acostumbrados. Si no como una especie de salsa con la que se aderezaban los guisos de conejos.<\/p>\n

Se considera que la predecesora del salmorejo es la Mazamorra. Con una receta muy parecida, de la que se cuenta que era alimento b\u00e1sico para las tropas romanas. Seg\u00fan parece, eran verdaderos expertos en recetas majadas de este tipo.<\/p>\n

Con el tiempo, tambi\u00e9n se convirti\u00f3 en alimento b\u00e1sico para los vareadores en los olivares andaluces. Tanto es as\u00ed, que si no ten\u00edan pan del d\u00eda anterior, lo sustitu\u00edan por las llamadas \u201charinas de pobres\u201d como la harina de haba seca o la de altramuces.<\/p>\n

El Salmorejo como tal no se conoce hasta tiempo despu\u00e9s de la llegada a Espa\u00f1a de los tomates con Colon, sobre el siglo XVIII (hasta entonces el Tomate era solo una planta ornamental). Sustituyendo el Salmorejo a la Mazamorra en los olivares en verano, hasta que, con los invernaderos, nos fue accesible durante todo el a\u00f1o.<\/p>\n
